A Pasqua non può mancare sulle vostre tavole un bel Casatiello, pane tradizionale della tradizione partenopea. All'impasto vanno aggiunti salumi e formaggi e sulla superficie vanno disposte uova sode chiuse da una "gabbietta" a croce. Proprio questa caratteristica lo differenzia dal Tortano, che prevede le uova all'interno.<br />

<li>1 kg di farina</li>
<li>450 gr di acqua</li>
<li>1 cucchiaino di pepe nero macinato</li>
<li>100 gr di strutto</li>
<li>25 gr di lievito di birra</li>
<li>1 cucchiaino di sale</li>
<li>400 gr di pecorino grattugiato</li>
<li>400 gr di salame Napoli</li>
<li>5 uova</li>

<u><b>Procedimento:</b></u><br />

Sciogliere nell'acqua tiepida il lievito di birra e far amalgamare con lo strutto e il pepe nero. Unire la farina e il sale ed impastare compattando bene con le mani a formare una palla.<br />
<br />
Sistemare l'impasto in una ciotola e lasciarlo lievitare, coperto con pellicola, per circa mezz'ora.<br />
<br />
Riprendere quindi l'impasto, tenendone da parte 100 gr, e stenderlo con l'aiuto di un mattarello fino ad ottenere un rettangolo di circa 30x60 cm. Cospargere la sfoglia con il salame tagliato a dadini e il pecorino grattugiato.<br />
<br />
Arrotolare delicatamente la sfoglia sul lato più lungo formando un rotolo.<br />
<br />
Ungere uno stampo a ciambella di 26 cm di diametro con dello strutto e porvi il rotolo facendo attenzione ad unire bene le due estremità.<br />
<br />
Lasciare lievitare per circa un'ora. Intanto, con la pasta tenuta da parte, formare delle striscioline di circa 10 cm.<br />
<br />
Trascorso il tempo di lievitazione, disporre le uova a raggio sulla superficie del casatiello e fermarle con due striscioline di pasta, formando una croce.<br />
<br />
Infornare per 10 minuti a 160° aumentare quindi la temperatura a 180° e lasciare cuocere per altri 60 minuti.<br />
<br />
Servire freddo. Si conserva bene per 4-5 giorni.<br />

Preparate la gratinatura con pane grattugiato pomodorini ciliegini tagliati a pezzetti molto piccoli, prezzemolo. sale e pepe. Spolverate la gratinatura sulle verdure e versate un filo d'olio evo e una spolverata di parmigiano, Infornate per 20 minuti a 200°. Sono ottime come contorno ma anche come piatto unico, accompagnate magari da una bella focaccia.</div>

Lorenzo ci ha chiesto di realizzare uno stadio olimpico con tanto di portiere con la maglia verde e, a questa richiesta, non potevamo proprio tirarci indietro!<br />

Aggiungete il burro e la farina ( i 500 gr) setacciata con il lievito e continuate a mescolare. Unite infine le nocciole e la cioccolata tritata grossolanamente e con i 100 gr restanti di farina formare un impasto di consistenza tipo pastafrolla. Formare due filoni non troppo alti ed infornare a 180 gradi per 20/25 minuti.
